1 1/2 cups blanched , peeled , deseeded and roughly chopped tomatoes
1 cup cooked whole wheat pasta
2 tsp olive oil
2 tsp finely chopped garlic (lehsun)
1 cup blanched broccoli florets
1/4 cup fresh basil , torn into pieces
1 tsp dry red chilli flakes (paprika)
salt to taste

Method


For chunky tomato pasta

  1. To make chunky tomato pasta, heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for 30 seconds.
  2. Add the broccoli and sauté on a medium flame for 1 more minute.
  3. Add the tomatoes, basil, chilli flakes and salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  4. Add the penne, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  5. Serve the chunky tomato pasta immediately.
