30 Minute Low Carb Cauliflower Steak Pepperoni Pizzas using only 6 ingredients. Pizza night just got a healthy upgrade, these Cauliflower Pizzas are 116 calories per serving and downright delicious!

Cauliflower “Steaks” … you guys!!! If you haven’t made them before, OMGeee!!

I use to make them a lot a couple years ago, but for whatever reason I stopped last year. Well, I’m bringing them back and today’s Cauliflower game is strong!

There is just something about roasted cauliflower that makes my tummy and heart happy. Well, really it’s any veggie that’s roasted because all the natural sweetness of that particular vegetable comes out in the roasting process. But, my favorite way to eat cauliflower is when it’s roasted.

In order to get those nice thick “steaks” you have to be pretty careful when slicing the head of the cauliflower. I usually use a pairing knife to cut the leaves off the bottom of the cauliflower. Just be careful not to cut too much of the core, because the core will help hold your cauliflower “steaks” together. Once I have the leaves and part of the core removed I make a thin slice off one side of the cauliflower and then the other side so I have two flat sides. Then I cut each cauliflower steak about 1 – 1 1/2 inches thick, you should get between 3-4 steaks per head of cauliflower.

This process works for me more times than not. The main trick it making sure you don’t cut too much of the core off or your steak will fall apart … ahem which truth be told, totally happened to me when I made them. Can you pick which cauliflower steak it is? (in the photo above) See, we all make mistakes.

Luckily this mistake can be covered in marinara sauce, cheese and pepperoni!

Woohoo!

When these babies are in your oven roasting they smell glorious but once you put them under the broiler to warm up the sauce, melt the cheese and make the pepperonis all nice and crispy they are down right irresistible!

You will be shocked at how much you’ll love them. I know my mom was. She was giving me the stink eye as I was making these pizzas, kinda like a “sweetheart, pizza is not meant to be on a cauliflower” look and then she tried them after they came out of the oven. Her tune changed pretty fast.

She loved how easy it was to make, that it cut out the gluten factor, was low carb and the flavor was way better than she thought. We made a last minute game time decision to sprinkle each cauliflower steak with garlic powder for a little extra flavor and I’m so glad we did. That little touch totally amped up the flavor and made these scream pizza night!

Ingredients

Scale

  • 6 (1″ thick) cauliflower steaks (I used about 2 heads of cauliflower)
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 6 tablespoons marinara sauce
  • 6 tablespoons shredded mozzarella
  • 18 pepperonis

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place cauliflower steaks on a baking sheet.
  3. Drizzle with olive oil and rub into cauliflower. Then sprinkle each cauliflower steak with garlic powder.
  4. Bake for 15 minutes.
  5. Remove from oven. Gently flip the cauliflower steaks and bake an additional 10 minutes.
  6. Remove from oven and top with 1 tablespoon of marinara sauce, 1 tablespoon of cheese and 2-3 pepperonis per “steak.”
  7. Turn broiler to HIGH.
  8. Place prepared cauliflower steak pizzas under broiler, until cheese is melted and pepperoni is crispy.
  9. Top with fresh basil. Serve!
